I won’t rule out that it was just getting lucky again, but so far I’ve managed to make two roast turkey dinners that didn’t suck. I can now begin kidding myself that I know what I’m doing.

The official Nosuch turkey roasting method:

  • Keep the bird covered in a foil tent except for the last 40 minutes for browning
  • Roast upside down for the first half of the cooking time
  • Brush with oil every 30 minutes. I use olive oil with some sage and garlic.
  • Stuff with sliced lemons and onions.
  • Use a meat thermometer and don’t overcook the damn thing.

The really big challenge was figuring out how two people and one lucky dog can eat a twelve and half pound turkey. I think we’re done with turkey until next Thanksgiving.
